Healthy Egg Sandwich Filling!

When I was working on a farm in New Zealand, weeding and watering hundreds of newly planted Manuka Trees in exchange for food and accomodation, Lou used to bake fresh bread every morning and make these yummy eggs to go with it. I fell in love with it, it's great as a sandwich filling, on crackers or baked potato, dead quick and easy to do and is much healthier than adding loads of mayo!



2 eggs per person

1 tbsp chopped fresh chives per person'

Salt and Black Pepper to taste


Pop the eggs in a pan of boiling water for about 2/3 mins, until soft boiled, so the white is hard but the yoke is still a little runny. Run them under cold water to cool them enough to touch. Crack the egg over a bowl and using a fork scoop out all of the egg, the yellow should be a bit runny. Mash the eggs along with the chives and salt and black pepper and there you go!
