Creamy Roasted Beet Salad with Dill & Feta

A super quick & easy, delicious lunch time salad or starter, or addition to your evening meal.

Ingredients:
  • 4 medium beetroot (mixed colours)
  • 1tbsp olive oil, salt & pepper
  • 1/2 cup Greek Yoghurt
  • 1tbsp honey & 1 tbsp lemon juice
  • 2tbsp chopped dill
  • 1/3 cup of feta
Instructions:
  1. Roast Beets at 200C or 400F with oil, salt & pepper for 30-35 until tender; cool slightly.
  2. Stir yoghurt, honey, lemon & dill with a pinch of salt.
  3. Toss beets & dressing, top with feta.
